1 Place the sugar in a small pan, add ¼ cup water and stir to dissolve sugar over a low heat. Increase the heat, bring to a boil and simmer for 8 to 10 minutes or until the sugar turns golden.
2 To Serve Place the wedges of blue cheese on 4 plates and top with sliced pear rings. Pour over the sugar syrup and serve.
