Succulent And Saucy Chicken In A Bag

Try this no mess, no fuss dish for deliciously juicy results!

Serves 4
Preparation time 20 minutes, plus marinating time
Cooking time 1 hour, 10 minutes
Oven temperature 180°C

• 4 chicken thigh and leg pieces
• 100ml roasted coconut (or coconut shavings)

Marinade

• 25ml mild curry powder
• 125ml Bulgarian yoghurt
• 10ml cornflour
• 50ml apricot jam
• 50ml chutney
• 30ml Dijon mustard
• 15ml sherry

1 Make the marinade Mix all the ingredients together. Place the chicken pieces in two medium-sized roasting bags, with two pieces per bag. Divide the marinade between the bags, rub it over the chicken and allow it to marinate for about an hour (or overnight if you have time).
