    Shiitake Mushrooms And Bok Choy Stirfry With Noodles

    Serves 4
    Preparation time: 10 minutes
    Cooking time: 10 minutes

    • 30ml soya sauce
    • 30ml Mirin (rice wine) or dry sherry
    • 30ml honey
    • 5ml sesame oil
    • 300g soba or egg noodles
    • 10ml peanut oil
    • 2 garlic cloves, crushed
    • 1 bunch of spring onions, chopped
    • 200g shiitake mushrooms, soaked for at least 10 hours, stalks removed and halved
    • 200g brown mushrooms, sliced
    • 1 bunch bok choy (Chinese cabbage)
    • roasted sesame seeds

    1 Mix the soya sauce, rice wine, honey and sesame oil in a mixing bowl and set aside. Cook the noodles according to the instructions on the packaging, drain and keep warm.
    2 Heat the peanut oil over high heat in a wok. Add the garlic and spring onions and stir-fry for 1-2 minutes. Stir in the mushrooms and stir-fry for 3-5 minutes. Stir in the bok choy leaves and the previously prepared sauce, then remove the wok from the heat. Arrange the stir-fried vegetables on the noodles and sprinkle with sesame seeds.
    Wine recommendation: Try a glass of Mirin for a truly Asian experience.
