• 4 large sweet potatoes
• 1 cup butter, softened
• 2 tsp brown sugar
• 1 tsp ground cinnamon
1 Preheat the oven to 200˚C.
2 Cut the sweet potatoes in half and push an apple corer into the centre, starting at the cut side and leaving the end closed. Remove the cored section.
3 Add the sugar and cinnamon to the butter and mix well.
4 Fill the centres of the potatoes with the flavoured butter and use a slice of the cored sections to seal the top. Wrap tightly in foil and stand upright in a baking dish (with the cut sides up).
5 Bake for one hour or until soft. Alternatively, cook in the coals of the braai.
