    Roast Chicken with Soy and Plums

    We’ve taken the hassle out of menu planning with this easy-to-prepare family supper

    Serves 4
    Preparation time 20 minutes
    Cooking time 45 minutes
    Oven temperature 180oC

    • 1 whole chicken
    • 2 onions, cut into wedges
    • 50ml honey
    • 50ml soy sauce
    • 2 cloves garlic
    • 6 ripe plums, halved and pitted

    Couscous

    • about 450ml chicken stock
    • 5ml cinnamon
    • 5ml ground coriander
    • 200ml couscous
    • 1 packet baby spinach leaves

    1 Stuff half an onion into the chicken cavity. Place the chicken into a greased roasting pan. Add remaining onion wedges to the pan.

    2 Mix the honey, soy and garlic together. Spread all over the chicken. Turn the chicken breast side down. Roast in a preheated oven for 30 minutes. Turn the chicken over and add the plums. Continue to roast until the chicken is cooked through.

    3 Couscous Heat the stock in a saucepan. Add the cinnamon and coriander. Add the couscous. Stir well. Switch the heat off. Add the spinach leaves and cover with a lid. Leave to stand for five minutes. Stir and season to taste.
