Preparation Time 10 minutes, plus standing time
Cooking Time 30 minutes
Oven Temperature 180oC
1 Pour the oil and soya sauce over the fillet. Season generously with black pepper and leave to stand for approximately 30 minutes.
2 Sear the fillet quickly in a hot pan to seal and brown it.
3 Transfer the fillet to a roasting tin and bake in a preheated oven for 20 minutes per kilogram for medium-rare or 24 minutes when following this recipe.
4 Remove from the oven and set aside to rest for five minutes.
5 Mix the pan juices with the cream and pesto and heat. Slice the fillet and serve with the pesto sauce.
