Chocolate-nut truffles
Makes: about 50
Preparation time: 1 hour, plus refrigeration time
• 125ml icing sugar
• 125ml cocoa powder
• 375ml finely crushed biscuits of your choice (try digestive, ginger or tennis biscuits)
• 125ml butter, melted
• 125ml condensed milk
• 125ml pecan nuts, chopped
• 200g dark chocolate, broken into pieces
• chocolate vermicelli, chopped nuts or other sprinkles, to decorate
• small truffle papers
1 Sift the icing sugar and cocoa together into a bowl. Add the crushed biscuits. Stir in the butter, condensed milk and nuts.
2 Roll the mixture into small balls and place on to a baking tray lined with baking paper. Refrigerate for 1-2 hours.
3 Melt the chocolate and leave to cool. Dip each ball into the melted chocolate and then put on to a wire rack to allow the excess chocolate to run off. Sprinkle with vermicelli, nuts or other sprinkles.
4 Leave to set, then put each one into a truffle paper and pack into small truffle boxes.
Packaging
Make personalised gift boxes for the coffee beans and truffles by sticking decorative paper on to the sides of a white box and a truffle box. Transfer the coffee beans from their bag into the decorated box and tie it closed with a ribbon. Stack all the gifts on to a cake stand, if you prefer, and secure with ribbon.
