Sweetly Refreshing Mango Sorbet

Effortless and perfect for summer!

No ice-cream maker required!

• 500g fresh ripe mango
• flesh, puréed
• ½–¾ cup castor sugar (depending on how sweet your mangoes are)
• 1 egg white
• a few drops of fresh lemon juice (optional)

1 Place the mango, sugar and egg white in a bowl and beat for 10 minutes.
2 Taste, then add the lemon juice if using, and beat.
3 Tip the mixture into a pre-chilled plastic container, smooth over the surface and replace the lid.
4 Freeze overnight or until frozen.
