    Roast Baby Vegetables

    The ultimate side dish for a roast

    Serves 6

    • 400g mixed baby carrots
    • 400g baby fennel bulbs
    • 200g baby leeks
    • 4 baby Savoy cabbage, halved
    • 2 tbsp mustard seeds
    • 1/3 cup olive oil
    • 250g Pancetta, cut into cubes
    • Sea salt and black pepper

    1 Preheat the oven to 180°C. Place the vegetables on a baking tray, sprinkle with mustard seeds and drizzle with olive oil. Season and bake in the oven for 30 minutes, or until tender.
    2 Heat a frying pan, cook the pancetta until crispy, drain on paper towel.
    3 To serve: Place the vegetables on a platter, sprinkle with pancetta.
