Serves 4
• 4 corn cobs, husks and silks removed and washed well
• ¼ cup good-quality mayonnaise
• 4 tsp tomato sauce
• 1 tsp cayenne pepper
• 1 wedge of Parmesan,
• finely grated
To serve
• lime wedges
1 Mix together the tomato sauce, mayonnaise and cayenne pepper. Add the mielies to a pot of boiling salted water and parboil. Finish the mielies on the braai so they are browned and charred in places.
2 While the mielies are still hot, brush with the mayonnaise mixture and sprinkle generously with the Parmesan.
3 Serve immediately, with lime wedges for squeezing over.
