    Peanut butter chicken sosaties

    Take the hassle of weeknight cooking with this dish – ready to eat in half an hour

    Serves 4
    Preparation time 10 minutes, plus marinating time
    Cooking time 15 minutes
    Oven temperature grill

    • 4 chicken breast fillets, cut into strips

    Marinade

    • 5ml grated ginger
    • 5ml turmeric
    • 50ml chunky peanut butter
    • 100ml sweet chilli sauce
    • 25ml lime or lemon juice
    • 5ml grated lime or lemon zest
    • 15ml finely chopped fresh coriander
    • cellophane noodles, cucumber strips and peanuts, to serve

    1 Mix all the marinade ingredients together and season to taste. Stir in the chicken pieces and marinate for 20 minutes.

    2 Thread two or three strips of chicken onto long wooden sosatie sticks that have been soaked in water. Place the sosaties on a baking tray and grill for three minutes per side.

    3 Serve the sosaties with the cellophane noodles, cucumber strips, chopped coriander and peanuts.
