For The Noodles
1 Preheat oven to 200ºC. Place pork fillet on a board, rub with peanut and sesame oil, then the 5-spice mixture. Season. Heat a griddle pan, add peanut oil and butter, sear pork on all sides. Remove and place in oven. Bake for 7–10 minutes.
2 For The Noodles Heat peanut oil in a pan/wok, add garlic, ginger and chilli, sauté for 1 minute, add peppers, sauté for 2 minutes. Add the hoisin sauce and soy sauce, stir to combine, toss in noodles and stir well to coat.
3 To Serve Divide noodles between serving plates, serve with sliced pork and sprinkle with spring onion, sliced red chilli, coriander and nuts.
