    Aromatic Chicken And Olive Bake

    Have your family feast on this succulent dish

    Serves 4
    Preparation Time 10 minutes
    Cooking Time 40 minutes

    • 8 chicken drumsticks
    • 30ml flour
    • braai spice
    • 10ml olive oil
    • 700g baby potatoes
    • 1 lemon, sliced
    • 200ml pitted olives
    • a few sprigs of thyme
    • 30ml olive oil

    1 Cook the potatoes in boiling water for 20 minutes. Meanwhile, coat the chicken in flour and spices to taste, then heat the oil and shallow-fry until golden brown. Drain the potatoes and lightly press them with the base of a glass so they burst open slightly.
    2 Spoon all the ingredients into an ovenproof dish, drizzle olive oil over, season to taste with salt and pepper, and bake for 30-40 minutes until aromatic and cooked through. Serve with a green salad.
