Baking for special diets.
Makes: 1 x 20cm cake
Preperation time: 25 minutes
Baking time: 30 minutes
Oven temperature: 180°C
• 125ml (85g) sugar substitute (such as Sugalite)
• 2 large eggs
• 65ml sunflower oil
• 250ml (140g) cake flour
• 10ml baking powder
• 5ml bicarbonate of soda
• 500ml (250g) finely grated carrots
Icing
• 1 x 200g tub fat-free smooth cottage cheese
• 50ml fat-free yoghurt
• 50ml sugar substitute (such as Sugalite)
1 Whisk the sugar substitute, eggs and sunflower oil together.
2 Sift all the dry ingredients together and mix into the egg mixture, alternating with the finely grated carrots.
3 Pour into a greased and lined 20cm cake tin and bake in a preheated oven for 30 to 35 minutes.
4 Icing Mix the cottage cheese, the yoghurt and the sugar substitute. Spread over the carrot cake once it has cooled completely.
