It’s quick, it’s easy and most of the ingredients are already in your store cupboard.

• 30ml sunflower oil
• 2-3 chicken breast fillets, sliced
• 2 tins of beans, rinsed and drained
• 125ml frozen corn
• 1 tin Mexican flavoured tomatoes
• 50ml fresh coriander, chopped, plus extra to serve
• fresh lemon or lime
• 4-6 tortillas
• avocado or guacamole, to serve
1 Brush the chicken with oil and grill on a griddle pan. Heat the beans, corn and tinned tomatoes in a saucepan. Bring to a simmer with the lid on. Stir in the coriander and a squeeze of lemon or lime juice. Season to taste.
2 Heat the tortillas for a few seconds in the microwave. Spoon some filling onto the centre of the tortilla. Fold up the bottom then fold the sides over each other. Secure with a toothpick. Serve warm with avocado or guacamole, extra coriander and lemon or lime to squeeze over.
