Syrup
1 To Make The Syrup Stir the sugar and water over low heat until the sugar has dissolved. Add the remaining ingredients and bring to the boil, simmering for about an hour until syrupy. Cool and remove the strips of peel.
2 Use a scoop to create fruit balls or simply cube fruit. Add fruit to the cooled syrup then stir in the mint leaves. Mix well and chill for an hour or two. Serve with Greek yoghurt, whipped cream or ice cream.
