1 Heat 20ml olive oil in a frying pan and sauté the onion and red pepper until the onion is transparent.
2 Brush the mushrooms with the remaining olive oil and place into a hot pan. Fry for 2 to 3 minutes a side. While the mushrooms are cooking, mix the sweet chilli sauce into the yogurt and spoon a dollop onto the bottom half of each roll. Top with avocado slices.
3 Place a mushroom, smooth side down, onto the avocado. Top the mushroom with fried onion and red pepper. Add some rocket and serve immediately.
