1 Cook the macaroni according to the package instructions until al dente. Rinse and set aside. Fry the onion in the butter until glossy, stir in the flour and cook for 1 minute. Mix the milk in gradually until smooth, then simmer over moderate heat until thick. Season with salt, cayenne pepper and nutmeg, and stir in the cheddar cheese.
2 Steam the cauliflower. Mix the pasta, parsley, cauliflower and cheese sauce and spoon into a greased ovenproof dish. Sprinkle the breadcrumbs and parmesan over and serve, or bake for 20 minutes until golden brown.
