Serves 6-8
Preparation Time 20 minutes, plus refrigeration time
1 Mix the two cheeses together and then refrigerate for about two hours, or until firm.
2 Toast the nuts and seeds and leave to cool, then mix them together with the cranberries. Spread out into a flat dish.
3 Put the cheese onto a piece of wax paper and shape it into a log. Roll the log in the nut mixture to coat it. Wrap it in another piece of wax paper and chill until firm.
4 Serve the cheese roll sliced accompanied by fruit, crackers and chocolate, or as part of a cheese platter.
