1 Preheat the oven. Place the sweet potatoes in a roasting pan, dab them with the butter and sprinkle the nutmeg, cinnamon and sugar on top. Season with salt and freshly ground black pepper, to taste. Oven roast uncovered for about 30 minutes or until the potatoes are soft and caramelised. Turn them once during the cooking process.
