    Lip-Smacking Shrimp Salad

    Try this as a refreshing lunch meal or even a light supper

    Serves 4
    Preparation Time 20 minutes
    Cooking Time 5 minutes

    • 1 packet of frozen shrimp (or used tinned shrimp)
    • 1 lemon
    • green pepper, seeded and sliced
    • 2 Granny Smith apples, sliced
    • cos lettuce
    • fresh bread, to serve

    Dressing

    • 80ml creamy mayonnaise
    • 45ml freshly squeezed lemon juice
    • 1 clove of garlic, crushed

    1 Bring 75ml water to the boil in a small saucepan. Add the zest of half the lemon and the shrimp. Boil for three to five minutes, or until the shrimp is heated through. Remove from the saucepan and set aside to cool.
    2 Make the dressing by mixing all the ingredients together well.
    3 Arrange the salad ingredients on a serving plate and scatter over the shrimp. Serve with the salad dressing on the side and some fresh bread, if you prefer.
