1 Pour 500ml-boiling water over four rooibos tea bags and two sprigs of fresh mint. Leave to infuse.
2 Meanwhile heat 200ml water and 80ml sugar together in a saucepan. Once the sugar has dissolved, remove from the heat and cool.
3 Strain the tea and add to the sugar syrup.
4 Add 5ml orange essence. Pour into a shallow container and freeze until starting to form crystals.
5 Remove from the freezer and break up the crystals with a fork. Return to the freezer and freeze. Repeat the process.
6 Freeze overnight.
7 Serve in a small glass or bowl as a palate cleanser.
