1 Heat 45ml olive oil in a large saucepan over a medium heat. Add the garlic and stir for 30 seconds, then add the onion, chillies and bay leaves. Sauté for a few minutes, until softened.
2 Add The Wine and bring to a rapid boil. Add the mussels and stir, then cover and boil for 3-4 minutes, shaking the saucepan a few times.
3 Once the mussels have opened, add the breadcrumbs. Stir and simmer for a minute, then stir in the parsley and remaining olive oil. Serve as soon as possible.
