1 Cook the pasta according to the package instructions until al dente. Place the sundried tomatoes and garlic in a large measuring jug and pour 250ml-boiling water into it. Allow to stand for 15 minutes. Add the olive oil and balsamic vinegar and purée with a hand blender. Season to taste with salt and pepper.
2 Heat the chicken in the sauce, then stir through the warm pasta. Sprinkle sweet basil and pecorino cheese over the top and serve immediately.
