Makes 500ml
Preparation time 30 minutes, plus freezing time
1 Place the fruit and 100ml of the juice into a liquidiser and blend until smooth. Press through a sieve to remove the seeds if you are using berries. Mix with the sugar, lemon juice and remaining fruit juice. Stir until the sugar has dissolved.
2 Pour into a container with a lid. Freeze for four hours, then remove from the freezer and break up with a fork. Return to the freezer and stir with a fork every 30 minutes for a further four hours. Break up with a fork again just before serving.
To adapt this granita recipe, use granadilla juice, 400ml puréed pineapple and 50ml granadilla pulp. Add 15ml chopped fresh mint and 5ml grated fresh ginger. Serve scattered with toasted sesame seeds.
