Oven Temperature 180°C
1 Stir the bicarbonate and boiling water into the banana puree. Allow to cool.
2 Whisk the melted butter, xylitol, egg yolks, milk and vanilla essence together. Stir into the puree.
3 Sieve the flour, baking powder, nutmeg and a pinch of salt together. Stir in the oats and nuts. Stir the puree mixture into the dry ingredients. Beat the egg whites until stiff and then fold into the batter. Spoon into a greased and lined loaf tin. Bake in a preheated oven for about an hour or until a skewer inserted comes out clean. Cool in the tin.
