Plum Topping
1 Preheat the oven and prepare a 24cm spring form tart pan.
2 Prepare The Tart Dough Beat the butter and castor sugar together until light and fluffy. Add the cake flour and a pinch of salt and mix until a soft dough is formed. Press the dough evenly into the tart pan and refrigerate for about 30 minutes. Place the tart pan on a baking sheet and bake for about 15-20 minutes until the dough is golden brown and cooked. Sprinkle the almonds over the dough.
3 Mix the plum quarters, castor sugar, corn flour and lemon juice in a mixing bowl and pack it on top of the crust. Return to the oven for about 40 minutes until cooked and serve at room temperature with whipped cream.
