    Fritattas with ricotta, parmesan and rocket in 3 easy steps

    Serves 6
    Preparation time: 15 minutes
    Oven temperature: 180°C
    Baking time: 15 minutes

    • 12 slices Parma ham (or use 24 slices Black Forest ham)
    • 300g ricotta cheese
    • 100g Parmesan or pecorino
    • cheese, finely grated
    • 6 eggs, beaten
    • salt and freshly ground black
    • pepper, to taste
    • 30g rocket

    1 Preheat the oven. Line the bottom of each muffin-tin cavity with the Parma or Black Forest ham.
    2 Mix the ricotta, Parmesan and beaten eggs and season with salt and black pepper.
    3 Place the rocket over the ham in the muffin-tin cavities and fill two thirds of each cavity with the cheese and egg mixture. Bake for 15 minutes (or until set) and serve hot or at room temperature.
