1 Heat a little oil and sauté the onion until soft. Add the bacon and fry until cooked. Set aside.
2 Combine the flour and baking powder. Season with salt and pepper and make a well in the centre. Pour the eggs and milk into the hollow. Stir the dry ingredients in, working from the centre outwards. Stir until just combined.
3 Add the cheese, parsley and the bacon and onion mixture and stir through until just combined. Heat a little more oil in the pan. Drop spoonfuls of the batter into the pan and fry over medium heat for about a minute a side, or until cooked through. Serve warm with potato wedges and salad.
