That’s right – fresh ingredients blended and instantly frozen before your eyes. Brr-isters who look like scientists in white lab coats and who wear protective gloves prepare your ice cream as you order it. ’Prepped with locally sourced full-fat milk, vanilla essence, sugar, cream and a special secret ingredient,’ says owner Marija Groenewald. ‘We do not use emulsifiers, additives, preservatives or any other artificial ingredients.’
N2IceCream Lab is the first nitrogen ice cream store in South Africa. Why use liquid nitrogen? Owner Marija Groenewald explains, ‘Liquid nitrogen is so cold and freezes so fast that it reduces the size of ice crystals that form ice cream. Smaller ice crystals create smoother ice cream.’
They currently offer four flavours: vanilla, chocolate, strawberry and a flavour of the week. There are also 10 toppings to choose from plus amazing hand-made sauces from salted caramel to toffee popcorn and a range of eight mix-ins, from traditional flakes to Turkish delight crumbs.
There’s a boozy buddy mix for the adults too. But this isn’t sold at the kiosk. They have a mobile unit, which can come to your venue or party and mix up your feast of flavours.
