Dash Restaurant at the Queen Victoria Hotel in Cape Town is getting the Asian treatment with the arrival of a new executive chef, Sam Wasserman.
Chef Sam hails from Port Elizabeth, and is a seasoned professional in the local culinary industry. With four years at London’s Soho Hotel, training at several local luxury bush lodges, like Lalibela Game Reserve – and two years at Le Quartier Francais in Franschhoek all under her belt, there is no doubt about whether she’s the right woman for the job.
Her passion for her craft never wanes. Sam says, ‘I’ve always wanted to be the best at what I do.’ Her passion for Asian cuisine in particular was ignited in London, where she worked in an Asian kitchen for six months. The restaurant’s new menu will soon reflect this influence, not just in sophisticated presentation, but in taste: ‘It’s great to make a dish look beautiful on the plate, but the taste is as important to complete the experience,’ she explains. Dash keeps a concise, well-priced, often revised menu, and Sam plans to stamp her signature on it by characterising the selection with her blend of Asian and French influences.
Dash Restaurant, named after Queen Elizabeth II’s favourite pet, is more of a night out than a traditional seated dinner, with fantastic views of Table Mountain and the V&A Waterfront. A night at Dash is an ultra-sophisticated experience. We’re excited to see how Sam’s changes will add to the Dash experience.
