• 12 slices white bread
• 2 tbsp butter
• ½ cup mayonnaise
• 300g shaved cooked gammon
• 16 cos lettuce leaves
• 2 large tomatoes, sliced
• 2 chicken breasts, cooked and sliced
• 4 pickled gherkins, sliced lengthwise
1 Preheat oven to 200ºC. Spread butter on both sides of bread. Arrange on a baking tray and toast in the oven. Turn over and repeat. Remove from oven.
2 Spread mayonnaise on toast.
3 To assemble Layer chicken, gherkins and lettuce onto 4 slices of toast. Top with another slice of mayonnaise-spread toast. Then top with gammon, lettuce and tomato and the last slices of toast. Slice into triangles, secure with toothpicks or skewers and serve.
