Try these delicate home-made marshmallows with delicious mint, strawberry and caramel flavours.
Makes: 12-15 marshmallow shapes
Preparation time: 30 minutes
• 37ml gelatine
• 425g (500ml) sugar
• 1 large egg white
• 3ml mint, strawberry or caramel essence
• pink or green food colouring
• icing sugar and cornflour, for dusting
1 Pour 60ml cold water in a large bowl. Sprinkle the gelatine over and soak for three minutes. Add 180ml boiling water and stir until the gelatine has completely dissolved.
2 Add the sugar, egg white and a pinch of salt. Beat for about 15 minutes until the mixture is very stiff and holds its shape.
3 Add the essence of your choice. Add a little food colouring at a time and mix it in well.
4 Sift icing sugar and cornflour into the bottom of a 20 x 25cm baking tin. Pour the marshmallow mixture into the tin and, working quickly, spread it out and smooth the top. Sift icing sugar and cornflour over the mixture to completely cover the surface and leave to set overnight.
5 Cut shapes out of the marshmallow using a metal cookie cutter dusted with icing sugar. Dust the sides of the sweet with icing sugar and cornflour. Store in an airtight container until ready to package.
To package, you will need:
• unfolded cardboard box with a separate lid
• spray glue
• scrapbooking paper
• wax paper
• coloured ribbon
• gift tag
1 Spray the unfolded box and lid with glue and cover with paper. Allow to dry and fold the box and lid into shape.
2 Make dividers with the cardboard to keep the marshmallows separate and line each compartment with wax paper. Decorate with ribbon and a tag.
